I then removed the inputBinding.xml file in /Users/myuser/Library/Application Support/FarmingSimulator2022 and let it build a new inputBinding.xml and refresh the XML files in inputDevices directory. I added the following line to /Applications/Farming Simulator 2022.app/Contents/Resources/shared/inputDevices/XboxOneWiredController.xml to match the values it was seeing on startup. With nothing to do on a holiday I did a little more digging.
